Stuffed Bell Peppers with Quinoa and Black Beans


A healthier twist on classic stuffed peppers, these are loaded with protein and fiber from quinoa and black beans—perfect for a satisfying, guilt-free meal.

↪ Ingredients

4 bell peppers, tops cut off and seeds removed

1 cup cooked quinoa

1 can black beans, drained and rinsed

1 cup corn kernels

1 teaspoon cumin

1 teaspoon chili powder

1/2 cup shredded cheddar cheese

Salt and pepper to taste


↪ Instructions

1. Preheat oven to 375°F (190°C).


2. In a bowl, combine cooked quinoa, black beans, corn, cumin, chili powder, and seasoning.


3. Stuff each bell pepper with the quinoa mixture, pressing gently to pack it in.


4. Top with shredded cheddar cheese.


5. Place the peppers on a baking dish and bake for 25-30 minutes, until the peppers are tender and the cheese is melted.


6. Serve with a dollop of sour cream or guacamole!
