Garlic Butter Cauliflower Rice
A flavorful and healthy alternative to traditional rice, this garlic butter cauliflower rice is quick to make and pairs perfectly with any meal!

1 medium head of cauliflower, cut into florets
2 tablespoons butter
2 garlic cloves, minced
Salt and pepper to taste
1 tablespoon chopped fresh parsley (optional)
Lemon wedges for serving (optional)

1. Pulse the cauliflower florets in a food processor until they resemble rice-sized grains. Alternatively, you can use a box grater to shred the cauliflower.
2. In a large skillet, melt butter over medium heat.
3. Add the minced garlic and sauté for about 1-2 minutes until fragrant.
4. Add the cauliflower rice to the skillet and stir well to coat with the garlic butter.
5. Cook for 5-7 minutes, stirring occasionally, until the cauliflower is tender but still has a bit of texture.
6. Season with salt and pepper to taste.
7. Garnish with fresh parsley and a squeeze of lemon juice, if desired.
